Many cocoas are alkalized or “Dutch processed”. This process washes the beans in an alkaline solution of potassium carbonate to make the flavor more mild or neutral. It also makes the cocoa powder appear darker. It looks darker, but does not mean it tastes darker. It’s actually the opposite. Go figure. Oreo cookies are ultra alkalized to get that dark, almost black, color. Oreos are not necessarily known for their high end chocolate taste. Ok, maybe in some circles.
