Dutch-process cocoa is natural cocoa that’s been treated with an alkalizing agent to lower its acidity, thus allowing more of its pure chocolate flavor to shine through.

How is cocoa produced?

1. cocoa beans are bought directly from farmers 2. beans are roasted 3. then the shell is separated from the groats 4. cocoa beans are ground 5. grated cocoa is pressed 6. pressed hard part of cocoa is ground into powder

To what degree and for how long cocoa beans are heated?

The cocao beans are heated at 40-45C for about 15-20 min before they are broken up into nibs.

INSTRUCTIONS:

1. In a 16 oz jar layer the powdered milk, cocoa powder, powdered sugar, and chocolate chips. Top with the marshmallows and crushed candy canes.

2. Seal with a tight-fitting lid and add ribbon or a name tag if using as a gift.

3. Add ½ cup of the hot chocolate mix to 1 cup of boiling water in a mug and stir until completely combined.

4. Top with additional marshmallows, if desired, and enjoy!
