Our 100% Raw cacao paste comes from Esmeraldas in Ecuador. Single origin cacao, particularly from varieties like Nacional and Criollo, is superior to CCN-51 due to its rich flavor profiles and unique characteristics that reflect the terroir of its origin- which in this case is Esmereldas. While CCN-51 is a high producing variety, its focus on productivity has come at the expense of taste.

The social enterprise formed is composed of over 800 small farmers all over Esmeraldas, covering over 1000 hectares of land of cacao.
Our Cacao paste is a quality aromatic genetically “pure” bean grown on small farms or farms or farmers usually grouped in cooperatives who choose to plant less productive but more valuable varieties of cacao. It represents 5% of world production and therefore the price farmers receive is higher. Chocolate with a fine aroma and notes of roses and fruit trees.
